2/29/2020: Sauteed Beets with their Greens (from the garden)

Ingredients:

  • 10 large beets (red or yellow or mixed) w leaves
  • 1/4 cup Olive oil
  • juice from 1 whole lemon
  • 5 cloves Garlic
  • 2 long twigs rosemarry
  • 2 long twigs oregano or marjoram
  • ground pepper

What to do:

  • chop beets into 1x1x3cm matchsticks (or halves if they are small). Separate leaves. Peel off any thick upper skin
  • chop garlic
  • saute: beets n garlic in olive oil about 20min till soft (covered)
  • add lemon juice, whole rosemary and whole marjoram
  • simmer 5min (covered)
  • remove rosemary and marjoram
  • add greens and boil down over 5min (covered)

Served w grilled sausage
